Thick, meaty, and full of bold flavor, this chili hits with rich tomato depth, smoky spices, and that signature Bear & Burton’s W Sauce umami bomb. It’s hearty enough to stand on its own, but even better with a cold drink and a pile of cornbread.

W Sauce Tailgate Chili

Ingredients

  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 1 green bell pepper, diced
  • 4 cloves garlic, minced
  • 2 lbs ground beef (or half beef, half ground pork)
  • 3 tbsp chili powder
  • 1 tbsp smoked paprika
  • 1 tbsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp cayenne (optional, for extra heat)
  • 3 tbsp Bear & Burton’s W Sauce
  • 1 tbsp Bear & Burton’s Everyday Hot Sauce (more to taste)
  • 2 tbsp tomato paste
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes
  • 2 (15 oz) cans kidney beans or black beans, drained and rinsed
  • 1 cup beef broth or water
  • Salt & black pepper to taste

Directions

  1. Build the Base:
  2. Heat oil in a large pot or Dutch oven over medium heat. Add onion and bell pepper and sauté for 5–7 minutes until softened. Stir in garlic and cook 1 minute more.
  3. Brown the Meat:
  4. Add ground beef and cook until browned, breaking it up as it cooks. Season with a pinch of salt and pepper.
  5. Spice It Up:
  6. Stir in chili powder, smoked paprika, cumin, oregano, cayenne, and tomato paste. Cook for 2 minutes until fragrant.
  7. Add the Liquids:
  8. Pour in crushed tomatoes, diced tomatoes, W Sauce, Everyday Hot Sauce, and beef broth. Stir in beans and bring to a boil.
  9. Simmer Low & Slow:
  10. Reduce heat and simmer uncovered for at least 1.5 hours, stirring occasionally. The longer it simmers, the better it gets.
  11. Taste & Adjust:
  12. Add more Everyday Hot Sauce if you want more heat, or W Sauce for extra richness. Season to taste with salt and pepper.
  13. Serve Hot:
  14. Load it up with toppings, pair it with cornbread or tortilla chips, and watch it disappear.
  15. Pro Tip: Make it a day ahead—chili always tastes better the next day. Also freezes great for future Game Days.
