4 cups buttermilk

Wet Mixture

1 cup buttermilk

1 egg
-

Dry Dredge

2 cups all-purpose flour

½ cup cornstarch

2 tsp kosher salt

1 tsp black pepper

1 tsp paprika

1 tsp garlic powder

Tallow Waffles
-
2 cups all-purpose flour
-
2 tbsp sugar
-
1 tbsp baking powder
-
½ tsp salt
-
2 eggs
-
1¾ cups whole milk
-
⅓ cup melted Bear & Burton’s Beef Tallow

1 tsp vanilla extract

For Serving

Warm maple syrup

Directions
Brine the Chicken
Whisk together buttermilk, W Sauce, Everyday Hot Sauce, salt, pepper, and paprika. Submerge chicken and refrigerate 4–12 hours.
Remove and allow excess brine to drip off.
Prepare the Dredge
In one bowl, whisk together wet mixture ingredients.
In another bowl, combine flour, cornstarch, and seasonings.
Dip chicken into wet mixture, then into dry dredge.
Repeat for extra crunch if desired.
Let rest 10–15 minutes before frying.
Fry
Heat oil to 325–335°F.
Fry 12–15 minutes, turning occasionally, until deep golden and internal temp reaches 170–175°F.
Drain on rack and season lightly.
Make the Tallow Waffles
Whisk dry ingredients together.
In separate bowl, whisk eggs, milk, melted tallow, and vanilla.
Combine wet and dry until just incorporated.
Cook in preheated waffle iron until deeply golden and crisp.

Assemble
Place waffle on plate.
Top with fried chicken.
Drizzle with maple syrup.
