Veganshire Roasted Veggie Grain Bowl

A healthy start to 2025 isn't a boring start.
Ingredients
- 2 cups roasted sweet potatoes and Brussels sprouts
- 1/2 cup cooked quinoa or farro
- 1/4 cup Veganshire
- 1 avocado, sliced
- 2 tbsp toasted pumpkin seeds
- Salt and pepper, to taste
Directions
- Toss roasted veggies with Veganshire.
- Layer quinoa in a bowl, then top with veggies, avocado slices, and pumpkin seeds.
- Season with salt and pepper and serve warm or at room temperature.
