2 cups Bear & Burton’s Mary Mix

1 whole turkey (12-14 lbs)

1/2 cup kosher salt

1/4 cup brown sugar

1 tbsp black peppercorns

1 tbsp crushed garlic

1 gallon cold water
Directions
Make the Brine: In a large pot, combine Mary Mix, kosher salt, brown sugar, peppercorns, crushed garlic, and cold water. Stir well until the salt and sugar are fully dissolved.
Brine the Bird: Submerge the turkey in the brine, making sure it’s fully covered. Cover the pot and refrigerate for at least 12 hours (overnight is ideal) to let the flavors fully absorb.
Roast It Right: When ready to cook, remove the turkey from the brine, pat it dry, and prepare to roast as usual. You’ll end up with a moist, flavorful bird that’s a guaranteed hit at the holiday table.
