Chuck Matto

Low effort. Maximum bark. This is the no-nonsense way to get full-on pulled pork flavor—fast.

Ingredients

  • 1 pork shoulder or butt
  • Bear & Burton’s W Sauce (use as a binder—pick up a bottle at your local retailer!)
  • Heath Riles Garlic Jalapeño & Honey Chipotle Rubs (or your favorite rubs)

  • 10 oz Wild Cherry Pepsi (or Coke)

Directions

  1. Preheat your smoker, grill, or oven to 325–350°F.
  2. Score the fat cap and coat the pork in W Sauce.
  3. Season generously—first with garlic jalapeño rub, then a layer of honey chipotle.
  4. Place the pork fat-side up on the cooker.
  5. After 1 hour, flip to fat-side down and spritz with a mix of water and white vinegar.
  6. After another hour, flip it back to fat-side up.
  7. After 3 hours total, once bark is set, transfer to a pan.
  8. Pour in 1 cup W Sauce and 10 oz Wild Cherry Pepsi. Cover with foil.
  9. Cook for 1 more hour, then let rest for 1 hour.
  10. Shred, mix with the juices, and serve it up hot.
