Directions
Preheat your waffle iron according to the manufacturer's instructions, ensuring it’s ready for a crispy finish.
In a large bowl, whisk together 1 cup of all-purpose flour, 1 tablespoon of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt until well combined.
In a separate bowl, beat 1 large egg and then mix in 1 cup of room temperature milk, 1/4 cup of melted Bear & Burton’s Wagyu Beef Tallow, and 1/2 teaspoon of vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are okay. Let the batter rest for about 5 minutes while your waffle iron heats up.
For the spicy maple syrup, in a small saucepan over low heat, combine 1/2 cup of maple syrup with 1-2 tablespoons of Bear & Burton's EVERYDAY Hot Sauce, adjusting the amount to your preferred spice level. Stir until heated through and well combined, about 2-3 minutes. Keep warm.
Once the waffle iron is ready, carefully ladle the batter into the iron, using enough to cover the surface. Close the lid and cook according to your waffle iron's instructions, usually about 4-5 minutes, until the waffles are golden brown and crispy.
Remove the waffles and serve immediately, drizzled with the warm spicy maple syrup.
