A lighter take on classic chili that doesn’t sacrifice depth or comfort. Lean ground turkey, creamy white beans, and a rich, savory base get finished with either Bear & Burton’s W Sauce for deep umami or Fireshire for smoky heat.
Ingredients
- 2 tbsp olive oil
- 1½ lbs ground turkey
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 1 poblano pepper, diced
- 1 tbsp tomato paste
- 2 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp dried oregano
- ¼ tsp ground white pepper
- 4 cups chicken or turkey stock
- 2 (15 oz) cans white beans (cannellini or great northern), drained and rinsed
- Choose Your Heat

- Kosher salt, to taste
Directions
InstructionsBrown the turkeyHeat olive oil in a large pot or Dutch oven over medium-high heat. Add ground turkey and cook until browned, breaking it up as it cooks.
Build the baseAdd onion, poblano, and garlic. Cook 4–5 minutes until softened. Stir in tomato paste, cumin, smoked paprika, oregano, and white pepper. Cook 1 minute to bloom spices.
Deglaze and simmer Pour in stock and add white beans. Stir in W Sauce or Fireshire, depending on your heat preference. Bring to a gentle boil, then reduce to a simmer.
Cook low and slow Simmer uncovered 30–35 minutes, stirring occasionally, until chili thickens slightly and flavors come together.
Season and finishTaste and adjust salt and heat as needed.
Serving Suggestion Top with sour cream or Greek yogurt, shredded white cheddar, scallions, or fresh herbs. Serve with cornbread, tortilla chips, or crusty bread.
