These chopped brisket sopes with Everyday Hot Sauce pickled red onions are the ultimate experience in flavor and texture. Take it from Tony "TFTI" Ramirez...these are money, dude.

Ingredients
- 1 whole red onion, thinly sliced
- 1 tbsp whole peppercorns
- 1 tbsp kosher salt
- 1 tbsp granulated sugar
- ½ cup apple cider vinegar
- Hot water (to fill jar)

2 tbsp Bear & Burton's Everyday Hot Sauce
- 1 cup refried beans
- 1½–2 cups chopped brisket
- ½ cup pickled red onions

¼ cup Bear & Burton's Everyday Hot Sauce, plus more to serve
- 1 cup shredded lettuce
- ½ cup Mexican crema
- ½ cup crumbled Cotija cheese
Directions
For the onion:
Add all ingredients to a container or jar. Top off with hot water until onions are fully submerged. Let sit for at least 2 hours.For the Sopes:
Add ~2 tbsp of refried beans to each sope and smoke at 225°F for 30 minutes.
Chop brisket, season with BBQ rub, and mix well.
Top each sope with brisket, pickled onions, lettuce, crema, Cotija cheese, and a drizzle of Bear & Burton's Everyday Hot Sauce.
Serve immediately and enjoy that smoky, spicy, tangy goodness.
