Ingredients

  • 2 cups blue crab meat

  • 1 tbsp Fireshire®, plus optional more for topping

  • 1 tbsp fresh chopped chives
  • 1 tbsp fresh chopped parsley
  • 1 tsp fresh chopped dill
  • Zest of 1 lemon
  • Salt and fresh cracked black pepper
  • 4 tbsp butter, melted, plus 4 tbsp for buttering English muffins
  • 5 English muffins, split and toasted
  • 10 eggs, poached
  • Garnish: S+P, Fireshire, fresh dill or chives, Maldon sea salt

Directions

  1. Toss together crab meat with Fireshire®, chives, parsley, dill, lemon zest, salt, pepper, and melted butter.

  2. Divide crab mixture amongst the toasted 10 English muffin halves.
  3. Top with poached egg and garnish. Serve on a large platter or plate individually.
