Ingredients

Grits

1 cup stone-ground grits
-
4 cups water or chicken stock
-
1 cup milk or light cream
-
2 tbsp butter
-
½ cup sharp cheddar cheese (optional but encouraged)

Kosher salt, to taste

Shrimp
-
1 lb large shrimp, peeled and deveined
-
1 tbsp Bear & Burton’s W Sauce

1 tsp Bear & Burton’s Everyday Hot Sauce (adjust to taste)

½ tsp smoked paprika
-
Black pepper, to taste

Sauce & Finish
-
4 slices bacon, diced
-
1 small shallot or ½ small onion, finely diced

2 cloves garlic, minced

1 tbsp flour
-
½ cup chicken stock or shrimp stock

1 tbsp Bear & Burton’s W Sauce

1–2 tsp Bear & Burton’s Everyday Hot Sauce

Squeeze of fresh lemon (optional)

Scallions or parsley, chopped (for garnish)
Directions
Make the Grits
Bring water or stock to a gentle boil. Slowly whisk in grits. Reduce heat to low and cook, stirring often, 20–25 minutes until thick and creamy.
Stir in milk, butter, and cheese. Season with salt. Keep warm.
Prep the Shrimp
In a bowl, toss shrimp with W Sauce, Everyday Hot Sauce, smoked paprika, and black pepper. Set aside while you build the sauce.
Build the Sauce
In a skillet over medium heat, cook bacon until crisp. Remove bacon and set aside, leaving the fat in the pan.
Add shallot and cook until soft, 2–3 minutes. Add garlic and cook 30 seconds.
Sprinkle in flour and stir to form a roux. Cook 1 minute, then slowly whisk in stock. Simmer until slightly thickened.
Stir in W Sauce and Everyday Hot Sauce.
Cook the Shrimp
Add shrimp to the sauce and cook 1–2 minutes per side until just opaque. Return bacon to the pan. Finish with a squeeze of lemon if using.
Serve
Spoon creamy grits into bowls. Top with shrimp, sauce, and bacon. Garnish with scallions or parsley. Finish with an extra drizzle of Everyday Hot Sauce if you like it spicy.
