Spiked Eggnog with Veganshire®
- 3 cups milk
- 1 1/2 tsp vanilla
- 1 tsp ground cloves
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 12 large eggs, yolks and whites separated
1 tbsp Bear & Burton’s Veganshire®
- 1 cup sugar
- 2 cups heavy cream
- 1/4 cup powdered sugar
- Pinch sea salt
- 3 cups Zacapa rum
- Garnish: Cinnamon stick and whipped cream
In a stand mixer or in a large bowl with a hand mixer, beat sugar and egg yolks, until pale yellow.
Slowly add milk and 1 cup heavy cream. Add Veganshire, vanilla, and spices. Pour into a large punch bowl or pitcher
Beat egg whites until stiff peaks form. Fold into remaining mixture, along with the Zacapa Rum
Beat remaining 1 cup heavy cream until whipped cream forms. Whip in powdered sugar and sea salt.
To serve, pour 1 cup eggnog mixture into glass of choice. Top with whip cream and cinnamon stick.
