Ingredients

  • 3 cups milk
  • 1 1/2 tsp vanilla
  • 1 tsp ground cloves
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 12 large eggs, yolks and whites separated
  • 1 tbsp Bear & Burton’s Veganshire®

  • 1 cup sugar
  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • Pinch sea salt
  • 3 cups Zacapa rum
  • Garnish: Cinnamon stick and whipped cream

Directions

  1. In a stand mixer or in a large bowl with a hand mixer, beat sugar and egg yolks, until pale yellow.

  2. Slowly add milk and 1 cup heavy cream. Add Veganshire, vanilla, and spices. Pour into a large punch bowl or pitcher

  3. Beat egg whites until stiff peaks form. Fold into remaining mixture, along with the Zacapa Rum

  4. Beat remaining 1 cup heavy cream until whipped cream forms. Whip in powdered sugar and sea salt.

  5. To serve, pour 1 cup eggnog mixture into glass of choice. Top with whip cream and cinnamon stick.
